Healthy meals don't have to be bland! Here's a recipe for a chunky, healthy minestrone that uses fresh ingredients and has less calories than traditional minestrone.
The beauty of this recipe is that you can change the ingredients according to what veggies you like. Add broccoli or fresh green beans toward the end of cooking if you prefer. You can even add fresh Roma tomatoes instead of the canned tomatoes. Just don't add any pasta! This pasta-free version keeps the calories low by adding waxy potatoes instead! |
